Thaw waffles on a full-size sheet pan at room temperature for 30 minutes.
Tear thawed waffles into quarters and set aside.
Add eggs, milk, and ginger to a large bowl; whisk together then set aside.
Arrange torn waffle pieces in a greased, 2-inch-deep hotel pan.
Pour in blueberries and egg mixture over top; cover with plastic wrap.
Chill in refrigerator for at least 45 minutes; remove plastic and cover with aluminum foil.
